Sweet chilli Pork Stir Fry

So I absolutely love making Stir Frys, they are a dish that is so quick and easy to throw together and they are a great way of being able to incorporate speed food into a meal which I often really struggle with. So this evening I decided I would have a go at making a stir fry and compliment it with low syned sweet chilli pork on top to give it some extra flavor.

Ingredients (Serves 2)

  • 300g extra lean stir fry pork strips
  • 2 sheets of dried egg noodle
  • Dark Soy Sauce
  • Stir fry vegetables
  • 5 tbsp of light sweet chili sauce (5 syns)

Syns: 2.5 syns per serving

What did I do and how?

  • Spray a large frying pan with fry light and put onto a medium heat and add into it the pork strips to cook
  • Fill a saucepan with water and bring to the boil, add the two sheets of dried egg noodles into the water and cook as per the packets instructions  (usually approx for  4 minutes).
  • Place a wok onto a low heat on the hob, throw in the stir fry vegetables.
  • Once the noodles have cooked strain them and place them into the wok with the stir fry vegetables mixing all together.
  • Add a large couple of dashes of dark soy sauce into the pan and coat the noodles and stir fry vegetables.
  • Into the frying pan with the pork add five tablespoons of Blue Dragon light sweet chili sauce and coat the pork and allow to simmer.
  • Share the noodles between two plates
  • Share the sweet chili pork between the two plates placing on top of the stir fry noodles.
  • ENJOY!

Afterthoughts:

I can honestly say that I thoroughly enjoyed this dish and it was so quick and simple to make, the pork coated in the sweet chili sauce really gave the dish lots of flavor and made for a really enjoyable meal. Also you dont just have to have pork you could use chicken, beef, prawns and it would work just the same. Definitely a dish that I will be having again and experimenting with with prawns and chicken.
